Baked Blueberry Rice

Bake Time: 60 Minutes
Bake Temperature: 350 degrees
Ingredients:
1 cup rice 3 eggs 2 cups water
1 tsp. vanilla 1 1/4 cup milk 1 1/2 cup blueberries
3/4 cup sugar pinch of cinnamon
1 3.4oz. pkg. vanilla instant pudding
Instructions:
Boil rice in water until rice is soft. Mix eggs, milk, vanilla, and sugar. Add the pudding mix and blueberries. Add rice, after draining all the water, to the egg mixture. Pour into 8 inch square glass pan. Sprinkle with cinnamon and sugar. Bake at 350 for 1 hour. Use this with any meat dish in place of potatoes.
